Vegan apple cinnamon waffles

Ingredients:
  • 1 cup of tapioca flour
  • ¼ cup of almond flour
  • 2 tsp. baking powder
  • ½ tsp. ground cinnamon
  • 1/4 cup Agave (more or less depending on how sweet you want like)
  • 1 cup almond milk
  • ½ cup applesauce
  • 1 Tbsp. coconut oil
  • seasonal fruit

Directions:
  • Step 1
    In a large bowl, combine the flour, baking powder, cinnamon, and sugar.
  • Step 2
    In a separate bowl, combine soy milk, applesauce, vanilla, and oil. Add the soy milk mixture to the dry ingredients, stirring just until combined; do not over mix.
  • Step 3
    Carefully drop about ¼ cup batter onto preheated waffle iron for each waffle, and cook until done.​
  • Chop seasonal fruit for topping.  If you are feeling really risky sprinkle organic powder sugar on top.

Take a Knee

It started with one person taking a knee for injustice to African Americans in this Country.  Now the entire league is taking knees, locking hands or in the locker room until the Anthem is over.  Today the Dallas Cowboys, Owners, Executives and Players took a knee prior to the national anthem in solidarity and then stood for the anthem with their hands locked.

Again it started with One man taking a stand by taking a Knee.  Each one of us can be the change we want to see in the world...

Baking Without Eggs

Eggs help baked goods rise and they perform various functions. They provide moisture, texture and richness, and they work as binders.  All of its performance  can be easily replaced with healthier, plant-based ingredients. Here are vegan alternatives of which ingredients work best when, and in what quantities.


Organic Ground Flaxseed or Organic Chia Seeds
For each egg you replace, whisk 1 tablespoon of ground flaxseed or chia seeds with 3 tablespoons of warm water until the mixture is thick and creamy. (Vigorously whisk into a nice froth for best results.) Works best in: waffles, pancakes, bran muffins, breads, cornbread, oatmeal cookies.

Organic Pureed Fruits
Consider half a mashed or puréed ripe banana as a replacement for one or two eggs. Other fruits that to consider are prunes, figs and pumpkins as they all contain fiber with helps with binding in baked goods. Works best in: breads, muffins, cakes, and pancakes.

Organic Applesauce
¼ cup of unsweetened applesauce equals one egg. Works best in: moist cakes, breads, and brownies.

Organic Silken Tofu
Whip ¼ cup in a blender or food processor until smooth and creamy. This equals one egg. Works best in: rich, dense, moist cakes and brownies.

Baking Soda and Vinegar
A ratio that works well is 1 teaspoon of baking soda along with 1 tablespoon of vinegar. This combination helps baked goods rise.  Apple cider vinegar and white distilled vinegar are good choices. Works best in: cakes, cupcakes, and quick breads.

Strawberries, with their impressive content of antioxidants and detoxifiers, can effectively help eliminate health hazards forever. It is a saying in India that a serving of any fruit every day will remove the “rust” from the joints. For strawberries, since it has very powerful anti-inflammatory abilities to ease the inflammation and associated pain from Arthritis and Gout.

Ingredients:

1 dozen strawberries -cleaned, tops cut off, and chopped
1 mango, peeled and chopped
1⁄4 cup red onion, chopped
1 Jalapeno, seeded and chopped
2 tbsp cilantro, finely chopped
Freshly squeezed juice from 1⁄2 lime

Directions:

Mixed all ingredients together in your favorite bowl and chill until ready to serve. Enjoy!

Mango Madness Summer QuEncher

Ingredients:

1 cup mango nectar
1/2 cup fresh lemon juice
3 tablespoons Stevia or Honey (optional)
Mango Spears for garnish

Directions:

Stir together nectar, lemon juice, and stevia/honey in a 1-quart glass measure. Pour half of mixture in shaker half filled with ice cubes and shake until cold, about 30 seconds. Strain into glasses filled with ice cubes. Shake and strain remaining nectar mixture in same manner. Garnish with fresh mango spear and Enjoy!
