Salmon is a heart healthy fish. It is important that when buying any food that your foods has not been injected with any GMOs, antibiotics, or any other chemicals. I buy the Wild Caught Alaskan Salmon with no antibiotics. So aside from Salmon being Heart healthy here are a few more reasons why you should choose Salmon:
-rich in Omega 3 fatty acids (Brain food)
-Rich in Vitamin B and D
-Great source of mineral
-Great for your skin as it may contribute to strengthen your skin cells (contingent upon other things you may be consuming)

Below is a quick romantic or family dinner for a nice summer day!

Ingredients

  • 1 salmon fillet ( I usually get a slab of Salmon from Costco)
  • 1/2 cup olive oil
  • 4 tbsp. coconut aminos soy-free sauce
  • 4 tbsp. balsamic vinegar
  • 4 tbsp. green onions, chopped
  • 3 tsp. coconut sugar
  • 2 cloves garlic, minced
  • 2 tsp. ground ginger
  • 2 tsp. crushed red pepper flakes
  • 1 tsp. sesame oil
  • 1/2 tsp. saltless seasoning salt (or to taste)

Place salmon filets in a medium, nonporous glass dish. In a separate medium bowl, combine all ingredients and whisk until well blended. Pour Mixture over the Salmon and let marinate fir a minimum of 4 hours. You may also wrap the salmon in plastic wrap while its marinating. It is really up to you on your marinating method, just make sure you allow the marinate to penetrate the salmon.

Either grill over a wood fire or coal but make sure you get this on the grill. Grill each side about 5-6 minutes depending on the thickness of the salmon.

You can serve the salmon with a bed of cauliflower rice with Kale leaves! Enjoy!

Juneteenth

6/19/2017

June 19 has been known as "Juneteenth Day," a combination of “June” and “nineteenth” which is the oldest celebration of the end of slavery in the United States.  It is also known as African American Freedom Day or Emancipation Day.

Although President Lincoln freed the slaves in the Emancipation Proclamation of Jan. 1, 1863, the good news didn't reach the folks in Galveston, Texas, until June 19, 1865 when Major General Gordon Granger and his troops arrived there, announcing the end of the Civil War.

Below is an excerpt from Granger’s speech:

“The people of Texas are informed that in accordance with a Proclamation from the Executive of the United States, all slaves are free. This involves an absolute equality of rights and rights of property between former masters and slaves, and the connection heretofore existing between them becomes that between employer and free laborer."

The Civil Rights era saw a resurgence of observation of the day, and it's been a staple of Milwaukee festivals since the 1970s.
